Duties & Responsibilities

  • PART - I: Daily Activities
  • 1. To verify the KOTs & BOTs with item wise sales / bills.
  • 2. To checks the Discount of Food & Beverage on daily basis.
  • 3. To prepare Food & Beverage cost report daily for information of the management and as and when it goes up with the Executive Chef / F&B Manager / Gm to reduce the same to the minimum ensuring proper control of the Food & Beverage cost.
  • 4. To collect all F&B checks of the outlets & verify that they are in order.
  • 5. The check NCs / KOTs / Void / Reprint bills.
  • 6. To verify the rates & quantities charged on the checks are in order & any discrepancies to be reported & the same to be charged to the concerned staff.
  • 7. To strictly monitor all purchases / issues of Food & Beverage.
  • 8. To ensure that all Food & Beverage items are purchased at most competitive rates keeping in view the quality.
  • 9. To keep control in receiving & stores in respect of food & beverage items to ensure that the proper quality and quantity of goods are received.
  • 10. To have strict control on Void, Cancellation, Missing & Pending checks.
  • 11. To take daily inventory of beverage items in Bar & shortage in respect of the same are charged to the concerned Bartender responsible.

  • 1. To do surprise verification of store Stock once in a week.
  • 2. To have a physical check on stores for proper storage / expiry of store items- once in fifteen days.
  • PART - III: Monthly Activities
  • 1. To conduct complete physical check of Inventory in coordination with the Store Keeper for all Food & Beverage items performing every monthly physical inventory.
  • 2. To do Food & Beverage cost reconciliation at the end of every month.
  • 3. To make slow moving and non-moving items report once in a month.
  • PART - IV: General Activities
  • 1. Whenever the menu changes, he is to update / check billing software for item grouping / item code / tax structure / item pricing.
  • 2. To do Recipe costing of the recipes served in F&B Outlets in consultation with the Chef & F&B Manger- annually.
  • 3. To do Market survey at least once in three months and ensure that the rates charged by the supplier and quality supplied by them is in order & competitive.
  • 4. To provide any information pertaining to his area of work to Management.
  • 5. To maintain Excise book & Filling of the monthly statement to the Excise Department.
  • 6. To liaison with Excise for all legal requirement related to the bar section.
  • 7. To have a daily verification of Excise book.
  • 8. To keep the GM Finance & GM Operations posted in any changes in State Excise Policy.
  • 9. To coordinate with Executive Chef and suggest ways on cutting down the costs & bringing in line with the budgeted cost.
