Roles And Responsibilities

As Chef having in-depth knowledge of various Continental, Italian, Indian, Arabic & Far East Asian International cuisine. Responsible for maintaining clean work areas and following sanitation standards, as set by the hotel as part of the HACCP program and following the recently achieved ISO 22000 - 2005 award. Ensures the quality of food served in the hotel is always of high standard and prepared under strict hygiene and sanitary conditions. Ensure all items prepared in the kitchen meet the standards and specifications laid down for menu items with regards to quality, quantity, and presentation. Ensure that all kitchen staff maintains proper grooming, turnout, and hygiene. Makes regular check on buffet presentation in the Restaurant as well as during Outdoor banquets. Reviews and plans future banquet functions according to banquet function sheets. Reviews and suggests menu changes to eliminate slow moving items and introduce new items. Introduce Chef's specials from time to time. Conducts regular meeting/briefing with all kitchen staff. Any other duties that may be assigned by the management from time to time.
