Design and Construction of a Solar Drying System for Food Preservation, The objective of this work is to design, develop and evaluate performance of an indirect forced convection solar dryer consisting of a solar air collector and a drying cabinet. The dryer has been designed indigenously using locally available materials for construction and it is cost effective. The dryer can be used effectively for drying agricultural products. In the dryer, the heated air from a separate solar collector is allowed to pass through the products. The results obtained during the test period revealed that the temperatures inside the dryer and solar collector were much higher than the ambient temperature during most hours of the day-light. The dryer exhibited sufficient ability to dry food items reasonably rapidly to a safe moisture level and simultaneously it ensures a superior quality of the dried products.
