  • Supervising, controlling and setting benchmarks for hygiene standards and quality control.

  • Monitoring meal loads and required raw materials to be order to ensure control on the food cost without compromising on quality &service delivery.
  • Well planned on the production process to curb the wastage and spoilage day to day.
  • Duty allocation &Staff briefing on the changes in the meal rotations as well as additional flight to be cater or meal service changes due to flight disruptions to ensure delivery on time.
  • Make sure The daily operation in smooth and problem free
  • Calculating the cost price of a particular food items on the menu
  • Effective implementation of food safety management systems like HACCP and ISO 2200:2005 IN Flight catering Unit with knowledge of Chilling cycle. GMP, GHP etc.
  • Monitoring the ingredient inventory no regular basis.
  • Monitoring the work activities of my team (300 members) on day to day basis.
  • Maintaining the butchery items.
  • Handling the responsibilities of production as a Chef on Duty since last 5 years.
  • Well Knowledge of Indian, Tandoori, South Indian, Chinese & Thai.
