Determination of Phytochemical and Antioxidant Profile of Desert Lime (Citrus glauca) - Curtin University (Feb '25 — Nov '25).

The study investigated the phytochemical composition and antioxidant profile of Citrus glauca, a native Australian citrus species. The research assessed the nutritional and functional significance of Citrus glauca through assays to quantify TPC, TFC, and ABTS. The findings established the fruit as phytochemically rich, with huge potential as a functional food source.

New Food Product Development Project - 'Kakadu Plum flavoured Almoind Yoghurt' - Curtin University (June '24 — Nov '24).

Developed a new plant-based, high-nutrition yoghurt with almond milk and a unique Kakadu plum jam blend. With the help of Australian natural ingredients, this project aimed to address the increasing demand of vegan, lactose- free, ecological products.

Food Engineering Project - 'Formulation of noodles with integration of pomegranate pomace' - Curtin University (Feb '24 - May '24)

Developed an instant fried noodle with pomegranate pomace powder The new formulation resulted in an excellent flavor of pomegranate pomace, a firm texture, a rich nutritional profile, and a bright yellow color of noodles. After product development, HACCP principles were implemented. Mass balance calculations were carried out. The plant layout was also created for industry setup and applications.
