Dissertation: Grain Amaranthus: An Overview
Synopsis of the work: Amaranth has a wide potential in the preparation of designer or tailor-made foods for the targeted population. Because of their health benefits, these grains do need a great promotion to reach heights of the major cereals in terms of their utilization. Hence, thrust should be given to develop value added diversified products from these grains. Additionally, increased efforts have been made necessary to make these plants more known among the population. To reach this aim, thorough search of the most relevant scientific literature was carried out for preparing this report.
Investigation: Preparation and Quality Characteristics of Semolina from Foxtail millet
Synopsis of the work: This work aimed at utilization of semolina from foxtail millet, which offers room for these grains in daily diet may be useful to form a healthy society. Semolina from wheat is very popular and commonly used by all. However, semolina from rice and corn also prepared to some extent. However, small millets, particularly foxtail millet is not been exploited for the preparation of semolina so far. The millet forms a very good source of protein, dietary fiber and carotenes. The carbohydrates from the millet are complex in nature and hence offers many health benefits for the population of diabetes, obesity etc. Recent researches have suggested use of the millet in traditional as well as contemporary food products. However, widespread utilization of the millet is still limited. This is mainly because of the non-availability of variety of food products based on foxtail millet in the market. Hence, preparation of semolina from foxtail millet may be one of the solutions to offer better avenue for the millet products.
During this period, I had opportunity to gain hands-on experience on Rapid Visco Analyzer (RVA), Soxhlet Apparatus, Brookfield Viscometer, Hunter Lab Colorimeter, Atomic Absorption Spectroscopy (AAS), Spectrophotometer.
