Antimicrobial components analysis of Kombucha

  • Conducted antimicrobial compound analysis of decoction, self-prepared, and commercial kombucha using Gas Chromatography-Mass Spectrometry (GC-MS).
  • I identified Amoxapine as a common antimicrobial compound present in all three kombucha samples & Glafenin in self- prepared Kombucha and commercial kombucha samples

Thesis Project – Encapsulation & Application of Bio-colorant from Senna auriculata

  • Extracted flavonoid-rich bio colorant (quercetin) from Senna auriculata using eco-friendly hot water and ultrasound-assisted extraction techniques.
  • Encapsulated the extracted bio colorant using spray drying to improve stability, shelf life, and controlled release properties.
  • Applied the encapsulated pigment in a ready-to-serve (RTS) ginger-amla beverage as a natural food color demonstrating its functionality and visual appeal.
